Mini McGriddle Pancake Bites
These mini McGriddle-inspired pancake bites are the ultimate sweet-and-savory breakfast made easy. They combine fluffy pancake mix, sausage, egg, cheese, and a drizzle of maple syrup — baked right in a muffin tin!

- 1 ½ cups boxed pancake mix plus ingredients on box for batter
- 6 breakfast sausage patties
- 6 eggs
- ½ cup shredded cheddar or American cheese
- 2 –3 tbsp maple syrup plus more for drizzling
- Salt and pepper to taste
- Cooking spray or butter for greasing
Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin well.
Make pancake batter as directed on the box. Pour into muffin cups (just enough to cover the bottom).
Bake pancakes for 8–10 minutes or until set and golden. Remove and set aside.
In another batch or tin, crack one egg into each muffin cup and lightly whisk. Season with salt and pepper.
Bake eggs for 10–12 minutes until just set.
Meanwhile, cook sausage patties in a skillet and slice or shape them to fit muffin size.
Assemble each bite: Start with a pancake base, top with baked egg, sausage, shredded cheese, and a small drizzle of maple syrup. Add another pancake on top like a sandwich.
Optional: Return assembled bites to a warm oven for 2–3 minutes to help melt the cheese.
