These mini McGriddle-inspired pancake bites are the ultimate sweet-and-savory breakfast made easy. They combine fluffy pancake mix, sausage, egg, cheese, and a drizzle of maple syrup — baked right in a muffin tin!

Ingredients
  

  • 1 ½ cups boxed pancake mix plus ingredients on box for batter
  • 6 breakfast sausage patties
  • 6 eggs
  • ½ cup shredded cheddar or American cheese
  • 2 –3 tbsp maple syrup plus more for drizzling
  • Salt and pepper to taste
  • Cooking spray or butter for greasing

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin well.
  • Make pancake batter as directed on the box. Pour into muffin cups (just enough to cover the bottom).
  • Bake pancakes for 8–10 minutes or until set and golden. Remove and set aside.
  • In another batch or tin, crack one egg into each muffin cup and lightly whisk. Season with salt and pepper.
  • Bake eggs for 10–12 minutes until just set.
  • Meanwhile, cook sausage patties in a skillet and slice or shape them to fit muffin size.
  • Assemble each bite: Start with a pancake base, top with baked egg, sausage, shredded cheese, and a small drizzle of maple syrup. Add another pancake on top like a sandwich.
  • Optional: Return assembled bites to a warm oven for 2–3 minutes to help melt the cheese.
